What to serve with young chicken (galeto)

Galeto series

Young chicken (galeto) is not served alone. Buy a Cornish hen or a small air-chilled bird. In the Serra Gaucha, the galeto al primo canto houses around Caxias do Sul built a fixed set of accompaniments that arrive with the bird, and those sides are as much a part of the meal as the chicken. Buy air-chilled chicken. Air-chilled chicken skips the US water-chill tank, so antimicrobial chemicals used in that bath (commonly chlorine or peracetic acid) do not reach the meat that way. It retains less water and browns better. A small bird is the one that belongs here.

Polenta, first and always

Polenta is the classic partner. This is Italian immigrant food adapted in southern Brazil, and cornmeal is the base the whole meal rests on. If you serve only one side with galeto, serve polenta.

Two forms are common. Soft polenta, polenta mole, is cooked to a loose porridge and spooned onto the plate under the chicken so it takes the juices. Use coarse cornmeal, roughly a 4 to 1 ratio of water to cornmeal by volume, salted, stirred over low heat for 30 to 45 minutes until it pulls away from the pan. Finish with butter.

Fried polenta, polenta frita, is the same thing poured into a pan, chilled until firm, cut into thick batons, and fried until crisp outside and soft inside. It is the more common restaurant form and it holds better on a buffet. Make the soft version the day before and fry it the next day.

Maionese

Brazilian maionese is a potato salad, not a condiment. Boiled potato and carrot diced small, sometimes peas, bound with mayonnaise, seasoned with salt and often a little onion and parsley. It is cold, mild, and rich, and it exists to balance the acid and char of the rest of the plate.

Keep it plain. No mustard-heavy dressing, no pickle relish, no celery seed, no hard-boiled egg dominating it. Those are potato salad moves from another table and they change the dish. The full bowl is here:potato salad (maionese de batata).

Radicci with bacon

A simple salad

Lettuce, tomato, onion, dressed with oil, vinegar, and salt at the table. That is the whole thing. Brazilian salad at a churrasco table is deliberately plain and its job is freshness, not complexity. No creamy dressings, no croutons, no cheese.

Brazilian tomato-onion sauce (vinagrete)

Brazilian tomato-onion sauce (vinagrete) is diced tomato, onion, and green bell pepper in vinegar and oil with salt, sometimes with parsley. Let it sit 30 minutes before serving so the onion softens. It goes over the chicken, over the polenta, over anything.

Toasted cassava flour (farofa)

Toasted cassava flour (farofa) is cooked in butter until golden and nutty, often with onion and sometimes with bacon or egg. It is dry and savory and people sprinkle it over the plate for texture.

Farofa is universal at Brazilian barbecue rather than specifically a galeto side, but it appears on these tables and it is easy. Dry cassava flour (farinha de mandioca) is the one ingredient you probably have to seek out. Tapioca starch is a different product and turns gluey.

Rice

Plain white rice, cooked with garlic and a little oil, sometimes appears. It is optional and secondary here in a way it is not at a Brazilian weekday lunch. If you are already making polenta you probably do not need it.

What does not belong

Baked beans are a different barbecue and have no place at this table. Feijao is a Brazilian dish, but sweet molasses-and-bacon baked beans are not the same food.

Creamy coleslaw, shredded cabbage in a sweet dressing, is not a Brazilian side. Serving it and calling it authentic is a mistake. A plain shredded cabbage salad with vinegar is closer, if you want something in that direction.

Cornbread, mac and cheese, and barbecue sauce are all out for the same reason.

Putting the plate together

Polenta on the plate first. Half a galeto on top or beside it. A spoonful of maionese, a handful of salad, vinagrete within reach, farofa in a bowl to sprinkle. Serve everything at once rather than in rounds, which is how galeto differs from a beef churrasco.
